Ascorbic Acid (Vitamin C): The Stability Problem Filers Face

Vitamin C serums have a reputation for turning an unappealing shade of brown or orange after a few months, and that is not a manufacturing defect, it is chemistry doing exactly what everyone who works with ascorbic acid already knows it will do. Understanding why matters for your formula and for what actually ends up on your notification.

The basics

L-ascorbic acid is the active, biologically useful form of vitamin C, and it is genuinely one of the better-studied antioxidant and brightening actives available to cosmetic formulators. Its INCI name is Ascorbic Acid, and its CAS number is 50-81-7. It shows up in serums, brightening creams, and increasingly in "vitamin C boosted" versions of everyday moisturizers.

Why it is so unstable

Ascorbic acid oxidizes readily when exposed to air, light, heat, and water, especially in combination. Oxidation is not just a cosmetic problem, in both senses of that word. Once ascorbic acid oxidizes, it loses much of the activity that made it worth including in the first place, and it produces the yellow-to-brown discoloration that signals the degradation to anyone looking at the product.

A few practical consequences of this instability:

  • pH sensitivity. Ascorbic acid needs a fairly low pH, often below 3.5, to stay in its stable, active form. That is a demanding target for a cosmetic formula, since a low pH like that can be irritating to skin and hard to balance against other ingredients.
  • Water sensitivity. Anhydrous (water-free) formulations tend to preserve ascorbic acid far longer than water-based ones, which is why you see a lot of vitamin C products packaged as oil serums or as powders meant to be mixed fresh.
  • Light and air exposure. Clear glass bottles and jars that get opened and closed repeatedly accelerate degradation, which is part of why vitamin C products are commonly packaged in opaque or amber containers with airless pumps.
  • Shelf life reality. Even well-formulated ascorbic acid products often have shorter realistic shelf lives than the rest of a skincare line, and a batch that looks fine at three months can visibly change by month six if storage conditions were not ideal.

Why derivatives get used instead

Because straight ascorbic acid is such a formulation headache, a lot of the "vitamin C" products on the market actually use a derivative instead, chosen specifically for better stability at the cost of some potency or a different mechanism of action.

Each of these has its own CAS number and its own INCI name, and none of them are interchangeable with plain ascorbic acid on a notification form. If your supplier's documentation says one thing and your formula sheet says another, that mismatch is exactly the kind of error a filing review should catch before it goes further.

What this means when you are filing

On a Cosmetic Notification Form, whichever form you use gets listed under its own specific INCI name with its concentration or concentration range. There is no shortcut where you list "Vitamin C" generically. If your formula changes from straight ascorbic acid to a derivative, or if you adjust the concentration to compensate for stability losses over shelf life, that is a formula change that likely needs an amendment filed, not just a label update.

A practical note for makers

If you are set on using straight ascorbic acid rather than a derivative, plan your packaging and your claimed shelf life around its actual behavior rather than around what looks good on a mockup. A serum that browns visibly in the customer's bathroom in month four generates far more complaints and returns than a slightly less potent but stable derivative would.
