Someone asked me this after a soap workshop and I realized I'd never actually seen it explained clearly anywhere: if you didn't add glycerin to your soap, but the saponification reaction made some anyway, do you have to put it on the label?
What is actually happening chemically
Saponification is the reaction between a fat or oil and an alkali (lye) that produces soap. What a lot of people do not realize is that this same reaction also produces glycerin as a natural byproduct, roughly proportional to the amount of fat you saponified. Commercial soap manufacturers often extract that glycerin out and sell it separately, which is part of why some commercial bars feel drier than a handmade bar. Most handmade cold process and hot process soap does not extract it out. It stays in the bar, which is a big part of why handmade soap has a reputation for being more moisturizing.
Does it need to be declared
Yes. Once saponification is complete, the glycerin in your finished bar is a real substance present in the product, not just a theoretical byproduct that disappeared. Ingredient labeling generally works on the basis of what is actually present in the finished product, not on the intent behind how it got there. Glycerin retained from saponification is chemically identical to glycerin you would buy and add directly, so it gets listed the same way any other glycerin in a formula would be: by its INCI name, Glycerin.
The fact that you did not "add" it as a separate ingredient does not exempt it. This trips people up because it feels like declaring an ingredient you never touched, but the labeling logic follows the finished product's actual composition, not your shopping list.
What about the other saponification products
The same logic technically extends to trace amounts of unreacted or partially reacted material and to soap itself, which is why cold process soap ingredient lists typically show the oils used (by their INCI names, like Olea Europaea Fruit Oil for olive oil) alongside "Sodium Hydroxide" even though, strictly, no free sodium hydroxide remains in a properly formulated, fully saponified bar. The listing convention in most jurisdictions is built around declaring the reactants (the oils and the lye) rather than a granular breakdown of every reaction product, with glycerin being a notable and consistent exception that does often get called out because of how much of it is retained.

Take a basic olive oil and coconut oil cold process bar. The ingredient declaration would typically read something like:

Glycerin sits in the list at whatever position its retained concentration warrants, generally somewhere in the middle to later portion of the list since it is present in meaningful but not majority amounts.

Beyond getting the label right, this glycerin content is genuinely a selling point. A lot of soap makers underplay it because they think of glycerin as an "additive," when really the moisturizing reputation that handmade cold process soap has earned over the years comes substantially from this retained glycerin doing its job in the bar. It is worth mentioning on your packaging or product page as a feature, not hiding it as a technicality.
