Preservative math is one of those small formulation details that quietly causes real filing errors, and sorbic acid versus potassium sorbate is a textbook example. They're chemically related, they do the same preservation job, and makers frequently use whichever form their supplier stocks without stopping to check whether their percentage math is actually talking about the same thing.

Same job, different molecule

Sorbic acid is the acid form of this preservative. Potassium sorbate is its potassium salt, essentially sorbic acid neutralized with potassium hydroxide to make it more water-soluble and easier to work with in aqueous formulations, which is why potassium sorbate shows up far more often in actual finished products than sorbic acid does.

Because they're related but distinct molecules, they have distinct INCI names and distinct CAS numbers. Potassium sorbate is not simply "sorbic acid, but dissolved." On paper, for notification purposes, they are two different ingredients, even though they trace back to the same underlying preservative chemistry.

Why the conversion actually matters

There's a general concentration consideration for sorbates as a preservative class, and it's usually expressed relative to the acid form, sorbic acid itself, even when your formula actually contains potassium sorbate. That means if you're using potassium sorbate, you may need to convert its concentration back to a sorbic acid equivalent to check whether you're within the relevant limit, rather than checking potassium sorbate's raw percentage against a threshold that was really written for the acid form.

Because the exact numeric threshold and the precise conversion approach are the kind of specifics that can vary by market and get updated, don't rely on a half-remembered number. Confirm the current applicable limit and conversion expectation with the regulator or current guidance for wherever you're selling, and apply it carefully rather than assuming potassium sorbate's percentage on your supplier's spec sheet is the number that matters directly.

A few practical situations where this trips makers up:

  • Reading a supplier blend's spec sheet. If a preservative blend lists potassium sorbate as one of its components, remember to multiply the component's percentage by the blend's use level in your finished product, the same as you would for any supplier blend, to get potassium sorbate's real concentration before you think about any conversion.
  • Switching suppliers mid-production. If your new supplier's preservative system uses sorbic acid where your old one used potassium sorbate, don't assume you can substitute the same percentage. The two forms have different molecular weights, so an equivalent preservation effect isn't the same numeric percentage.
  • Combining sorbate preservation with other acids. If your formula includes both sorbic acid and potassium sorbate for some formulation reason, you'd generally want to think about their combined contribution relative to whatever the applicable class limit is, not each one in isolation.
